Migration assistant, iPhoto/iTunes and mail settings?

Hi all,

I expect delivery of my MBP today and I am re-thinking using migration assistant because my iMac G5 has been having issues going to sleep and occasionally freezing up on the screen saver (I think I fixed that problem, however).
Anyway, I would, however, like to use MA to transfer my mail settings/mailboxes, and my iphoto and itunes libraries. Is there a way to move just these specific items with the migration assistant? And can this be done after the machine is booted up and I've created my account or does it need to be done during the set-up process?

iPhoto and iTunes are easy, especially if you let iTunes manage your Library and hasn't moved it from the default location. Just copy the ~/Pictures/iPhoto Library and ~/Music/iTunes folders to the same location on your new machine.
