I've a new phone and watch coming and I use a two watch setup. One of them will be replaced for the new.
I think I know the correct procedure which will be a little different this year with the new migration ability.

My main query is whether to unpair the two watches before migrating to new phone (then pair the new watch & restore from old), or will the watches data migrate over too meaning once migrated I'll just unpair the watch I'm replacing to restore to the new.

I believe it will be migrated and you didn't have to un pair any watch. Just un pair the one you replace with the new one after. That's what I guess.
