I'm planning on getting the equivalent of this setup of the 2011 iMac when the new ones come out:
27"
i7 3.4ghz
AMD GPU (don't remember the numbers) with 2gb memory (hoping for 3gb in refresh)
16gb ram (from owc)
(possibly 256 gb SSD, hopefully a 128 or smaller option comes out)

How many FPS will I get on minecraft with maxed out settings (render=far smooth lighting=on bobbing=on clouds=on everything else at its highest)

Also, how well do you thing it will run a 256x256 texture pack? (photo realism)
 
I get around 45FPS on my 2009 iMac 2.8GHz i7 with ATI 4850m with max graphics settings on without any mods. Id expect a 2011 or 2012 high spec iMac to run with a higher FPS than mine, though i am unsure on how a 256x256 texture pack will impact on performance.
 
First you need To consider the resolution that minecraft will play at, if you are going full screen or just as a smaller window. Now I don't know what the resolution is for a 27" iMac, but I'm pretty confident that if my 23" pc, with the same proccessor as the base iMac but with 6GB RAM and the 1GB nvidia graphics can manage around medium high settings with full screen, so 27" iMac with the i7 and 2-3 GB graphics can definatly manage minecraft with high settings, but yes, we don't know about how much faster minecraft will be with ivy bridge iMacs and/or the 256x256 texture pack though. I have tried a 256x256 texture pack though. Seems to lag hard on my computer. Lol.
 
Bro, you will be fine. WAYYYY more then fine. I have a 2.5 GHz, Ati HD 6750m (512MB), and only 4Gb of ram. I can run it 50-60 FPS max settings, and 30-40FPS with a 256x texture pack. With a 20-25 FPS on a x512 texture pack.

Hey, update to this thread. I got a spec'ed out iMac (without SSD or 2tb) and these are the FPS I am getting FULLSCREEN COMPLETELY MAXXED OUT SETTINGS.
origional texture pack: 75-90fps
32x32 hollowworld HD: 60-85fps
256x256 photo realism: 50-70fps
512x512 RPG realism: 35-50fps

I'm blown out of the water by the crazy good performance that this computer is giving me!
