Mini, MakeMKV or Plex. Which one causes A/V sync issues?

I have a new Mac Mini, the latest version of Plex and I use MakeMKV to copy my dvds. I've noticed that after watching the movie for a while (usually an hour in or more), the audio and video slowly get a little out of sync. I can use the chapter stops and fast forward into the movie and it looks fine, so it's probably not MakeMKV. It just looks like it's an issue over time when watching a movie from the top. I thought it might be that I set the Mini to put the hard drives to sleep when possible, but I unchecked that and it's still happening. Does anyone else have this problem?
