Apple has said that they will certify 2 Gb RAM modules for the Mini at some point in the future. A sticking point is going to be module size. Any module profile taller than 1.2 inches is not likely to fit into the machine physically; so while there are a few esoteric 2 Gb modules on the market, most of them would not work.
However: The pricegrabber link you provided is for kits of 2 x 1 Gb modules. That is no-go - the Mini has only one socket. Watch out for the word "Kit" - that tips you off that you are looking at 2 modules, not one.

RAM is always on an exponential curve. The highest capacity modules (with the heaviest technology demands and the lowest sales volume) are always disproportionately high priced.

As for the memory... if your price difference is only $100, it oculd be worth it so you always have the Apple memory in it and you have no problems if it ever needs repairs.
Sometimes it's worth a few dollars not to have to open up a box - especially one not meant or designed to be opened up by the user.

With getting the memory from a third party, there are two issues - the MacMini while not impossible to open, is a bit tricky to open it and not damage it. And the second revolves around memoru specs. Sometimes third parties will issue memory that is mostly compatable and works fine until either a firmware or OS upgrade. And then at that point you have to see if the memory vendor will cover that under their warranty (more cost and hassle).
With the PowerMac I'm buying later this year, I'll have Apple ship it with either 1 GB (inexpensive enough upgrade) or 2 GB (only a bit more than buying the memory from Crucial) and then get more memory from probably Crucial. The difference here is that if the third party memory become incompatible for some reason, at least I'll still have some Apple memory in the system. And I'm also looking at saving over $500 currently. Of course, I'll have to re-evaluate this when I order since memory costs do change over time.
