Does anyone have explanation to this? iPhone XR only has 3 modes for its Portrait mode but the Keynote showed it had 5 (there were Stage Light & Stage Mono, which are not existent on the XR).

That's a portrait selfie. Portrait selfie has all 5 modes, because the face id/truedepth camera is identical to XS/XS Max.
