I have a 2019 MacPro that came with 4 8GB R-DIMMs for a total of 32GB of memory. I recently upgraded to 6×32 for 192GB.

I know that putting the original 4 modules in with the new memory would slow it down based on other posts I've read but would buying 2 more 8GB DIMMs so that I have 32x6 and 8x6 (so each bank has 40GB) slow down since they're not identically matched pairs? Or would the fact that each bay has an equal amount of memory even if they're not matched pairs maintain full speed? All of the modules would be 2933 R-DIMMs.
 
Yes, you can mix sizes with R-DIMMs (LR-DIMMs must all be the same size). But there are rules for which slots to populate, and which slots the bigger DIMMs get installed into. Read Apple's support page for MP 2019 memory installation.
