Will the iphone 6 display mobile versions of sites by default similar to the 5 and 5S when using safari?
 
Probably. But good news! Apple's nitro engine is now available to third party apps. That means you can use Chrome or any other browser and not take a performance hit. These 3rd party browsers give much more options, including to be able to request the desktop site.

Will this apply to all iPhones with ios8 or just the 6 and 6 plus?

mikethbigo is correct. It's an iOS 8 feature, so it'll work on any device that runs iOS 8. I'm super excited though because now I can use Chrome and keep my browsers consistent between my iPhone and Mac.
