Maybe this has been answered, but I don't think so...

I currently have an iPhone and an IMAP account (fastmail.fm) that works pretty well pulling mail every 15 minutes. I have to have my own domain for email as this is my primary business phone (sending from kevin@me.com won't do).

(1) Is it possible to use MobileMe to wirelessly sync my calendar (use iCal) and contacts but continue to use my IMAP for email every 15 min?

(2) When someone sends you a meeting invitation, will the 2.0 s/w allow you to (a) accept/decline (iCal does - iPhone currently doesn't) and will the meeting then sync wirelessly to iCal/iPhone (via MobileMe)?

Yes. On your iPhone, Mac and Windows box, do not setup MobileMe mail. Instead, setup your IMAP mail. You can accept meeting invitations via any email.
 
You can have multiple e-mail accounts set up on your phone, so there's no reason having MobileMe set up would force you to stop using your existing e-mail.
