I have seen where people have taken there PowerBook and moded the Apple on the LCD to turn it a different color. Is it possible to do this also to a MacBook? Or will it void the apple care?

Well those people take the LCD panel and put some some coloured plastic film between the backlight and the apple...so yes, this will void your warranty.
An alternative would be to paint the apple with some tinted transparent paint, or cut an adhesive coloured plastic to fit it exactly and put it on the outside....i doubt either of these would void the warranty, but you might want to call Apple first.
