Just noticed, that since I updated my iMac to Mojave, I have problem with editing the id3 tags in iTunes: album art is not saved, other tags suddenly reverts to the previous values etc...
Today I discovered, that this happens only if I'm editing id3 tags while music currently playing in iTunes and AirPlay is enabled (I'm transmitting the music to other room using Airport Express). If I disable AirPlay, the id3 tags editing is successful.

Is there anybody who is experiencing similar issues? Try to disable AirPlay and see if this solves the problem.
