iBird Yard - if you enjoy backyard bird watching/feeders, its an amazing little app. I've actually been able to lure in birds using the encoded bird calls in the app for a closer look.

Dropbox
ToDo
Penultimate
Goodreader
Newsrack

All nice apps. Some paid and some free. Dropbox is good for quickly transferring photos from my laptop
news rack is a really nice RSS reader app. Although I do miss the wooden effect rack that there is in the iPhone version.
I got ToDo to Because it is much cheaper than Things and does pretty much the same thing.
Penultimate is good for quick notes when a keyboard is a little too slow.

Also Sundry notes is a really good app for anyone needing to do anything mathematical or scientific because it has a load if Greek letters and a dedicated mathematical set if symbols aswell. And it's free iirc.

Atomic browser. Definitely best one out now.

Mirror's Edge. I'm totally addicted to this game.

TakeNotes (formerly PadNotes) for marking up PDFs. This has been a game changer for me.

Weather Channel HD. Always went to weather .com for weather, but now there's an app for that.

Star Walk is amazing to play with and one of the best apps for showing off your iPad when someone calls it a giant iPod Touch.

Maps. I'm working in South Korea right now, so using my GPS and marking locations allows me to get around quite well. Not really anything comparable to street signs here so, yeah it's another godsend.

I'll have to give that a try! Sounds like fun.

Also, I use 1Password, Evernote, GoodReader, iAnnotate, etc. There are more and more useful apps appearing, and we've only just begun....

Hmm, in the last day or so, my most used apps have to be:

-Dropbox
-Early Edition
-Evernote
-Mail
-Safari
-Wordpress

I just downloaded Epicurious, which looks to be a most used app too. Will check out FatSecret too though.

So far...

Evernote: organizes my web browsing snippets, photos, notes, ideas
Pianist Pro: I use it to record music
Keynote: great for presentations, demos (I get lots of "oohs and aahs")
Mr. Fingerpad: great for jotting down notes quickly and drawing
Tweetdeck: MUCH easier to access the endless columns I've created

I use the following iPad apps on a daily basis:

ToDo
MaxJournal
Pocket Money
AppAdvice

I also use the following iPhone apps everyday on my iPad....

Pocket Informant
iExpenseIt
xoCal

Air video
App advice
Goodreader
Beejive
Downloader
Those are my 5 favorite now but I really like the wired magazine app as well I hope they offer a subscription with it

Pages
iBooks
NewsRack
Instapaper Pro
Simplenote
Todo
BeejiveIM-iPad

Besides the games I play regularly (Turf Wars and others)

App advice
Tweetdeck (when is facebook integration coming like on the iPhone)
Atomic browser
Im+

I do all my rss feeds through google reader so I'm not using any of the rss apps.

Oh yeh and zinio. Love getting my magazine subscriptions through them digitally instead of print

So far:

Instapaper
NewsRack
---
AccuWeather
Night Stand
---
3banana
Simplenote
Goodreader
... and Dropbox will likely become one of my key everyday apps.
... and also, I think Things will become one as well
The NPR app is a pretty nice news app too.
Twittelator for Twitter

FatSecret is a great app, it probably would get a lot more users if they changed the name.
