I'd like to de-install Mavericks and re-install Mountain Lion so that I can edit video safely with Final Cut 7 on my new 27" iMac

How can I do this?

If your Mac came with Mavericks, then you can't install Mountain Lion on it. Various drivers/hardware bits and pieces will be incompatible with ML.
 
It is absolutely NOT possible if your iMac shipped with Mavericks. Although since your OP says "reinstall" I assume it didn't ship. I don't know the exact process but you would have to find a download of ML and put it on a bootable USB drive. I think it'd be just like a clean install of Mavericks, but you would be installing ML. You'll probably want to double check the backup compatibility since you're downgrading also.
