It's more of a philosophical question because I don't have any opposing facts regarding this move. I just remember that installing the latest iOS on an iPhone 4s was a big mistake. Is that the case here? Will my battery life, background processing, and CPU load in ordinary scenarios be the same, better, or worse? I'm currently using macOS Catalina.

I have a MacBook Pro with a discrete GPU. I hope Monterey can fully utilize its features.

So, are there any downsides to upgrading to the latest officially supported OS on this MacBook?

There are no downsides to using a more modern OS. In my experience, using the LATEST version when it first releases can be a bit of an issue.

Also, keep in mind that macOS Monterey has gotten the axe and is no longer receiving security updates. It may be worth it to upgrade to Ventura or Sonoma using OpenCore Legacy Patcher.

If you do not have any software compatibility issues going from Catalina to Monterey, I'd recommend updating.
I had a few issues with Catalina but they seem to have been ironed out with Monterey and everything seems quite stable. Monterey received a security update just last month and might receive one more before they stop support for it. I plan on using it at least another year before moving on myself.

And macOS 12 is okay for such old device?
If its officially supported, it should be fine. What year is it? Do you know the processor and amount of RAM that is installed? I'm running a 2015 MBP / 2.8 i7 / 16GB RAM and Monterey runs without any issues or trouble.

I'm sure they'll be more patches before the end of the year. Monterey, Ventura, and Sonoma all received their latest update 56 days ago. Every release since Mountain Lion in 2012 has gotten 3 years of updates.
