I have a 2012 Mac Pro with an internal 2TB HDD partitioned for Windows X under Boot Camp -- 1TB for Windows, the other 1 TB for file storage under Mac OS.

I've just purchased a new Mac that should be on its way shortly, and I'm wanting to just take the HDD out of my Mac Pro and put it in a USB-C HDD enclosure.

Will I still be able to access my Windows partition via this method?

You can access the data on it, but you likely will not be able to boot from it. Also note that by default macOS cannot write to a Windows NTFS partition.

Thanks for the response.

Disappointing I won't be able to boot from it. I'll have to see if I can get a Thunderbolt enclosure for the single drive then, as I heard you can install a Windows partition on a Thunderbolt drive and have it still work.
 
Windows is generally picky about booting via an external drive on a Mac. Even if you put that drive on an internal bus, it'll boot but be unhappy because of how Windows activates and deal with its drivers.
