I just purchased a second hard drive for my Mac Pro and I would like to set the default location for all of my data- pictures, documents, music, movies- to the second drive leaving the initial drive for the OS and applications.
How can I do that?

well you can change your itunes library location to there. same with iphoto. You video apps don't really have directories. there isn't an app for what your wanting to do, just go through each application by application and change the settings. Most apps remember where the last place you saved a file, word, photoshop, a billion other apps so that is kinda default.
 
I actually have 2 second hard drives set up as a mirrored RAID array. I thought this would improve read/ write times as the applications and os are on a separate physical drives.
I'll check out the Macosxhints site you suggested.

If you wanted speed mirrored was not the way to go, its slower. For speed you want a RAID 0 but remember if 1 drive fails both drives do.
