I am unable to move icons from one page to another. I can move them within the same page but when I drag them to the edge of the screen, they simply return to their original spot. What am I missing here? I have the IOS 14 update installed.

I find this a bit frustrating as well. There's a touch needed where you hang onto the icon and slide to the next screen, but it seems very sensitive whether it will work on a particular try or not.

I have watched a couple of youtube videos and it always shows how easy it is to do. I beg to differ.
 
Moving icons was a train wreck in the early versions of iOS 13. Couldn't be done reliably. Eventually they figured out the screwup and a few months before it was sent out to pasture for the iOS 14 debut, iOS 13 got the functionality back. Now iOS 14 has the same problem. It's like a veneral disease that wasn't treated completely the first time and now it's returned again.
But don't fret, by April they'll probably have fixed it again

Yep, moving icons is horrific. I remember the days of hooking your phone up to iTunes so you could move your apps on the home screens the way you wanted. Those were great days. :p.

I know there's a shortcut where you can grab a ton of icons to move them at once but ... I always end up forgetting about it or just needing to move <5 apps - and it is an infuriating experience.

I think this has fueled why I only have 1 home screen - even to the point where most of my home screen is filled up with folders. Don't get me started on how hard it is to move apps between folder "screens" and in and out of other folders. lol.
 
After some playing around with it, I was able to move some icons from one page to another. But it certainly isn't an easy process.
 
It's not just you. The sensitivity has gotten harder and harder to get "right" as time has gone on in iOS. (Or as I've gotten older, hard to say because they both happen in parallel...) I think Apple gave up on it, too, by introducing App Library. Obviously there were probably other reasons, but obviously self-organizing icons is not one of their top priorities.

The thing that frustrates me is that if I barely touch one of the other apps on the edge, it brings up the folder. I wish the popup menu would have move app and merge app where move would not allow you to create a folder with another app.

Don’t try to move the icon off the screen to force the next page.

Drag the icon to the edge of the screen and hold it there for a second, the next page then slides over. And if you keep holding the icon there, more pages will keep sliding past (assuming you have multiple screens).
 
Just as a historical data point-
I have an older iPhone on iOS 9 and moving icons across screens is effortless, natural, predictable and easy.

Yup, it’s real finicky sometimes and that’s why I always do it with 2 fingers: One to hold the app icon and the 2nd one to swipe to a different page.
