I currently have my library with my own directory structure on an external. I'd like to move it back onto my computer (and maintain my directory structure). I've read up on moving libraries, but people always just have iTunes consolidate libraries which I think will have iTunes manage the directory structure.

Does anyone know how to do this? Or am I incorrect with my assumption?

iTunes (and iPhoto) will depend on having files in their own directory structure for them to work.

I've seen lots of threads on MacRumors from people who object to that. Don't blame them, but it might lead to more peace of mind to imagine the songs as records in a database as opposed to files on your hard drive. Then you won't get worried about where they are.
