moving mailbox, address book, keychain, iphoto etc to a new mac - help

Im an getting a new mac. I know that there is a feature that lets you copy all your programes etc to you new computer from your old via firewire but....

I have so much junk, bits of uninstalled programs, demos etc that i dont want in my new mac. Is there a way to just move the items I want and not all the crap as well?

use migration assistant (applications --> utilities)
