Hello: I have a 2018 Mini with 32 gig ram, i5. I want to add Windows 10 on a separate SSD, and run the latest version of MS Flight Sim. Has anyone done this, and if so, how does it run ? Thanks

If just using the Mac Mini integrated GPU, I don't think it would work well, the game needs a lots of graphics power.

It's running fine for me using an eGPU (vega 64), but thats when eGPU + bootcamp are working :) its a bit hit and miss, not sure I could recommend getting eGPU for bootcamp. My eGPU has worked well over last few months until new year, and then took 3 days to fix, its difficult to maintain.
 
Minimum spec is a desktop RX570, so with no eGPU you can absolutely forget it. Given that eGPU's no longer play nice with bootcamp, i think you'll be wasting time and effort.

It's a title that you really would be better off running on the ecosystem it is intended for - or you could wait a few months and pick up an Xbox series S/X and play it on that with less cost outlay.
