I am moving from Windows to Mac, and have contacts on MS Outlook for my iPhone.

What should I use on the Mac for contacts, that are comptaible with Outlook export files.

If your sync'ing your contacts with 'Contacts' on your iPhone then when you sync up to your Mac it will Sync up to 'Contacts' on your Mac. What's on the iPhone is the same as the Mac.
 
You will want to use Outlook to export your contacts into a file that Mac's address book app can read. These are vCards, LDIF and text file which is and excel format csv or comma delimited.

So create the file with outlook and save it to something like a CD or USB drive and then have the Address book app read it and import it.

Yes, export them to Address Book and when you sync your iphone address book seems to work the best.
