I have a new iMac and have installed MS Office 2011. Coming from a PC, I would like to continue to use Outlook as my default email application and not the iMac email application.

- Is there a place where I can set Outlook as the default?

- I've also noticed the address book auto launches when I look for an email address, which launches the iMac email as well. I want to avoid this, any help?

I think you can just do this. by clicking the top left outlook menu, click preferences, and general setting. there is a button to make default.

IMail is a Windows-based email server. The MacOS X email client is Mail. The system default email client is selected in the Mail Preferences dialog box.
 
Actually you can change the default E-mail client in Mail and in Outlook:
