Okay, so I searched the forum to see if this was covered and I couldn't find anything on it.

So, when you double-click the home button you have the option of holding down on one of the icons, much like on the homescreen, and they will start to jiggle with a red minus sign on the top left corner.

I have noticed that when there are a numerous amount of apps running, and I attempt to clear them, my phone sometimes freezes. Does this happen to anyone else?
 
No, because (and I do realize I'm swimming against the tide here) I don't clear apps from the multitask bar BECAUSE THEY'RE NOT RUNNING!!!!1

Yes this happens t me also I then have to restart my phone holding the sleep and home button. It's happened 3 times so far. Hopefully the next update fixes this.
 
yes, it takes about 5 seconds in freezing and I have to exit out and then get back into multi-tasking to delete those icons.

I haven't had to hard reset, yet.
 
I too have had this issue on my 3GS. Takes a few seconds for it to unstick itself.
