So when I open an application (mail, contacts, a game, whatever) it automatically goes into the multi-tasking bar. I went into the multi-tasking bar and saw that it had 10 apps listed. Are these apps continually running? Does this make the phone slower? Do I have to delete the apps out of the multi-tasking bar every time I'm done using them?

No. Most apps are using "Fast app switching" that put's them into a freeze state where they are paused and use up no memory. Only apps I can think of with true multitasking are the music Apps: Pandora and Slacker.
