I just got my new Macbook Pro (and I love it). But, I was wondering when/where I can use these reputed multi-touch gestures. The only multi-touch thing I have found as being possible so far is to change the size of desktop icons.

Click the pictures of the fingers to watch movies of all the multi touch gestures available. Web browsing, photo editing etc are features.

you can use a program in beta called multiclutch that allows you to customize gestures for apps. macworld has a great video podcast on what you can do
 
Do all of those gestures work for Macbook Pros? I can't seem to do anything that involves clicking on an item by tapping the track pad.

I don't believe they're enabled by default. You'll have to enable some/most of them in your trackpad settings.
 
On my MBP, everything besides drag lock was enabled by default. I routinely use tap to click, two finger scrolling, and secondary click gestures.
