Curious, do you have multiple accounts in your Outlook application? Example, a personal email account (maybe multiple) and a work email account (O365).

If so, any issues you experience with having multiple accounts, in particular work and personal? I'd like to use Outlook for both. But, I am afraid of sending an email to someone from the WRONG account.

So, currently, I use Outlook for work, and then the macOS Mail app (or a browser) for my personal...
 
I use even different account (user) in my Mac for personal, work and study. They all have their own universe.
 
I do and haven’t had any issues.

You can create profiles in Outlook and assign accounts to those profiles. The profiles have their own icon and can be a different color to help differentiate which one you're in. You could have a Work profile with your work account, and a Personal profile containing all your personal accounts. Or you could have a profile for each account if you wanted to keep them all separated. The profiles can also be linked to focus modes. For example, if you use the Work focus mode, you can have it switch to the Work profile automatically.

I don't know if this is an Outlook thing or a policy set via Exchange by my employer, but I'm unable to change the from address when replying or forwarding emails, so I don't have to worry about using the wrong account since it'll use the same account it was sent to. When composing new emails, it'll use the account that's in the active profile. If there are multiple accounts in the profile, then you can change the from address. The 'New Mail' button is colored based on the selected profile. If you use signatures, that'll also help differentiate which account you're using, as each account can have its own signature.

I'd say add some more accounts in and try things out. You can always remove them if it doesn't work out for you.
