I am looking to use (2) Airport Expresses going to a multi zone amplifier to power (2) sets of speakers in the yard. Is it possible to use the AirPlay feature from the iPod Touch to send audio to both the Expresses at the same time so they are synced? I figure this way I would get audio level control to both zones on the iTouch.

New to the Mac world and looking for solutions.

no, iOS sends only to one thing at a time, but you can do it from iTunes.
You can then use the remote app on the iTouch to control iTunes. (and control the zone volume levels.
 
I do this and the music is in sync but both have to play the same source....

If I were doing this again - I think I would go down the sonos route - yes more expensive but also (at the moment) better for music

Although I do also use the airports ethernet connections as well - which I couldn't do with the sonos
