what's going to happen to my car audio/car speaker phone Bluetooth connection when I already have apple watched connected to my iPhone ?
Is iPhone capable of multiple Bluetooth at the same time ?

Yes. No trouble with my iPhone connecting to my Pebble Steel and car's BT at same time.

For example, when I'm in my car and a text message comes in, my phone goes, my watch vibrates and shows the notification, and the text comes up on my dashboard.

That also means my bluetooth headphone and stereo system will play nice with apple watch too ;-)
