With Mac OS, one can use multiple Desktops. Thus, having certain applications open on specific Desktops.

Besides the obvious option of truly separating which applications show on which Desktop, does using Multiple Desktop help, or hinder performance (MBA Early 2015 / 8GB / Big Sur)?

I think it makes no difference whatsoever to performance. Multiple desktops is an illusion to accommodate the user. All that's going on is the system juggling the window images around.
