Multiple files/windows opening

Trying to sort out a MB for an elderly friend. She has 10.7.5 installed. Got everything as she wants except that every time we launch Excel (2011), or Safari (latest version), they open the last few files instead of just the one we want and Safari opens a number of windows last visited with the focus being on the last one.

Yet I have set the Safari preferences to open the Home page when it launched, and that is Google.

Any ideas or should I just install Mountain Lion for her? Really wanted to sort this one out before going any further.
