I have an early 2011 MacBookPro. Is it possible to run more than one external monitor?
If so, can they display different screens or simply mirror each other?
What type of adapter would I need?

Apples tech specs say no.

However you may be able to connect another using a USB adapter but usb 2 may well impact performance a fair bit.

You can also daisy chain monitors with thunderbolt out if you can find them and afford them.

A thunderbolt dock may also give you dual monitor ability it has enough bandwidth if you are on 1080p or less for resolution

There are lots of guides on the internet and different ways of doing it, time for some research to see what suits you.
