Multiple Sorting in Finder

Hi

Is there any way I can sort the contents of a folder in Finder by Kind and then by Name as well?

Can I set every folder to sort the same way and to view the same way without having to do it manually in every folder?

I've tried googling answers to these and haven't found anything that gives me an acceptable solution.
