For those considering using the Mac Pro as a media hub/PVR, I have to say, I've never been more pleased.
I have 2 USB tuners (EyeTV HYbrid and Hauppauge 950Q) and a dual tuner network device (HDHomerun) which allows me to record up to 3 HD and 1 SD signals simultaneously!
EyeTV 3 is very much worth it as well since I can transcode (albeit inefficiently since it uses quicktime in the background) to AppleTV or iPhone/iPod format which is imported directly into iTunes and is ready for me to sync in the morning.

The only major issue I had was with USB bandwidth being exhausted by 2 tuners on the same bus - to solve that, I purchased the Sonnet USB card which has 4 external ports and 1 internal one and that's worked out very well so far.

You are better off with Digital Everywhere tuners with Firewire interface. Much more stable and reliable. Works seamlessly with EyeTV.

Unfortunately, we don't have those tuners available in the US.
