Here's a question for the music members...

Can you create a radio station for itunes that you can put live input (ie, a microphone feed) into, and then run the visualisations from your own live sound?
 
You'll have to run an mp3 streamer like Sushi or Live365, etc. Then you tune into the broadcast, and turn on visualization.

I guess that's what your question was.

I'm guessing that you want to see the iTunes visualizer version of your voice.
There used to be a really good free app called "Audio Recorder" but I can't find it.

You can see your voice but not in real time.
 
Actually, I found this is a audio frequency spectrum display tool that may help.
The link above doesn't work (sadly) but there's another one I have yet to try it out.
