Hi,

Just wondering if there is a way to mute individual apps.

Ideally, I'd like to be able to be on a phone call (using the headphones) and continue to watch a video on screen with the video sound muted.

Doing it with the iOS volume controls will mute both the video sound and the call sound.

So is there any way I can just tell it to mute the video and not the phone call? I am jailbroken btw.

Not that I know off. This is even true for a lot of OSX applications (I'm looking at you internet browsers!!!) so it's not really a surprise.

I don't think you can. You can only do it if there is an option in that particular App but not many developers put that in.
