Could I upload the backups on OneDrive (and delete from my computer) and then later download it back when I need it?
 
You could.

How many do you need? You can delete old ones in iTunes Preferences.

I think I could save 30GB or more if I put all my backups online.
I thought old ones were automatically overwritten with the newest version?

How do you locate the backups when you click upload on OneDrive?
 
I found a guide somewhere that allows my backups to be stored on external SSD. Forwards the folder. I'd say I would link you to help, but was compilation of several online topics about it. Turned off auto backup and run when hard drive is plugged in and phone.
