I got my MacBook Pro in May of '07 and I am very concerned about my battery. The battery's health is reading at 61%. Should I be concerned? What do you think? Is this normal?

No, unless you have an absurd amount of cycles on it (450+). Call Apple and they will ask you a few questions and should send you a new battery. All you will need to do is send back your old one in the box they give you.
 
approximately 300 cycles or one year is what they told me. That being said, my daughter's macbook was over 300 (330) when her battery health degraded, and they were nice enough to honor the warranty and replace it free of charge.
