I have a mid 2012 15" MBP and I booted into recovery and erased my drive and now I am trying to reinstall ML and it is taking forever. I have been stuck at 3 hours for awhile now. Is there any tips or tricks to speed this up?

Are you booting the recovery from your HDD or are you using internet recovery from Apples servers?

Im using internet recovery method to install Mountain Lion and mine is frustratingly stuck on 'about 0 seconds remaining' ! Been like this for about 45mins now also unsure what to do.

I think if you have a large HDD it will take a bit longer but i would just sit tight for now. If you are using internet recovery then ethernet may speed this up and make sure you are connected to mains power at all times.
