I'm not here to whine, just to dump some thoughts and experience. The only iPhone 12 I haven't had is the Max is and I do not plan on trying that one.

First, I will go into display. Nothing scientific here but I used an all black video on YouTube, pitch black room and brightness set to 45-55%. Only the IP12P had issues with green bleeding in this setting. The Mini and regular 12 rendered perfectly. Other than that the warmness that you have seen mentioned was essentially the same across all of them. Seems like a calibration that Apple set. I personally didn't have any issues with this.

Secondly, battery. Again, nothing scientific here. In my usage the Pro and regular worked out fine on a daily basis for me, but it was closer to dying by the end of day as compared to the IP11P. The mini unfortunately couldn't handle my day to day and needed a charge at some point or another during early evening usually. But Apple has awesome standby and that is true again with these models.

Weird issues with some apps and touch only on Mini. Didn't do a lot of digging on this, but it seemed the Mini had some weird behaviors. Examples: BOFA app was not showing Zelle correctly, tried basic troubleshooting but no go. This same app\restore on other phones worked fine. Touch was another one. Swipe up from lock screen, double tap status bar to go to top of page in safari, and random missed touches. Let me reiterate, this wasn't constant, but was noticed here and there.

Build. All had great build quality and I didn't notice any scratches or quality control type stuff. My preference ended up with the regular 12 due to it's weight. In one instance I didn't realize I had it in my pocket lol.

Things I miss:

I miss the extra assurance of having the bigger battery from the IP11P. Regardless of data the IP11P lasted longer for me.
I actually miss the 5.8 form factor, so much so I may grab another IP11P. 3 years with this form factor and it's just perfect for me.

I was blinded by the square edge phenomenon this year lol. I should have just kept my IP11P
 
Love my 12PM coming from an 11PM, and I love the square sides again. Battery has also been great.

I consider myself an extremely heavy user because I have lots of downtime at work and since I’m mobile at work on cellular data 90% of the time. I also stream lots. I have an iPhone 12.

When I start work at 5:30am I’m usually at 95% battery. My work hours are 5:30am - 2:00pm. With my 12 I’m usually at 25% - 35% battery at around 12:00 - 12:30pm. What I do at this time is use my 20w Apple brick and USB C to charge my iPhone and by the time I leave work I’m over 80%+.

When I get home and if I stay home for most of the rest of the day I’m on WiFi. If I have 80% battery and use it hard I’m usually at around 35% - 45%.

Then what I have been doing lately is not even charging overnight. When I get up in the morning battery hardly moved.

So I get up and use phone hard at around 35% - 45% then when it’s time to take a shower I charge it with the 20w Apple brick and USB C. Make my lunch have some coffee and I’m ready to leave for work at usually 95%.
 
Have also tried all three devices like OP. Haven't tested the Max. My thoughts:

General
  • Not the biggest fan of the size options - felt like 5.8 was a great spot last year with the 11pro. 5.4 is nice, but a little small for text, whereas the 6.1 are a little unwieldy
  • Love the cameras on all versions. Not sure if I've seen significant improvement on the 12pro vs. the normal 12s.
12 mini
  • Size and weight is great - super easy to use one-handed. Typing is also fine and doesn't feel too cramped for me.
  • Battery is OK. I generally get about 3 hours of SOT using 50% of battery. If I'm on a heavier day of use (e.g. 5 hours), I start to get battery anxiety. This is really only an issue if I'm planning to be out and about all day, which rarely happens.
  • Performance is solid - no complaints. I do notice the lack of 6GB of RAM compared to the Pro. Apps reload more frequently, particularly after taking photos.
  • Overall, this is super refreshing as a design. The major question is if you can live with the battery, and are okay with the smaller screen. Personally, I'd love a slightly larger design (e.g. 5.6-5.7 in) and improved battery.
12 pro
  • Size and weight - a little too heavy and unwieldy for one-handed use. Two hands? Yeah, it's obviously fine. But extended one-handed use can make the pinky and hand a little tired. I do enjoy the extra screen real estate and typing with two thumbs is a little easier.
  • Battery is solid - can get about 4 hours of SOT using 50% of battery. On a heavier day, I might end around 30%, but generally don't feel any battery anxiety. Not as good as last year's crop, but sufficient.
  • Performance is great - the extra 2 GB of RAM seem noticeable to me. Apps stay in memory longer, and even things like Safari pages don't reload as often. It flies. It's particularly great when taking pictures, as apps don't always reload like they do with the 12s.
  • Overall, big fan of the performance and camera of the 12 pro. I just wish it was a tad lighter and smaller.

this whole experience matches mine very closely. overall have gotten used to the bigger size and am happy with the 12 pro, notice the ram making a difference keeping apps in background, love the new design and build, disappointed it got bigger than the 5.8 11 pro.

weight wasn't a big deal for me as its about the same as 11 pro, but it does feel significant in hand for sure.

tried the 12 and didn't feel it was 'worth' it for me. made more sense to pay 120 dollars more for the added perks of the 12 pro, and also the 12 pro just felt like the logical 'upgrade' for me coming from an 11pro

Yep - I'm ending up returning the mini to use the Pro. Battery on the mini was too worrisome, and having the extra RAM and more screen real estate is helpful. Will miss the one-handed ness of the mini, but hopefully Apple can shrink the size and weight of the pros a bit next year, or beef up the mini to create a "mini pro".
