Get a three Payg microsim or a tmobile Payg microsim for the iPhone, I assume you can get it unlocked like in the uk e.g http://www.t-mobile.co.uk/shop/micro-sim/
Top up £10 and get unlimited Internet for 12 months and choose from 100 uk minutes or 70 international minutes or Unlimited SMS per month if you top up £10
I would use Skype to call home for main calls
Three have a similar deals but they are 3G only network. Possible to have no coverage in really remote parts of Scotland
