I have the iOS 7 beta installed, but I've lost track of what build number the GM is. I know some have said they had to manually update.

I have 11A4449d

Software update is telling me no updates, so do I need to download the newest firmware manually, or will the next update show up in software update?

You will need to download it via iTunes on your computer and install that way. You cannot update OTA from a beta to the GM/Final release.
 
iTunes is also saying there are no updates, so if I restore, it will still put me on the newest iOS 7 version?
 
Originally when I checked, it said iTunes was up to date. Now I have the update installed, and it's downloading the update for iOS 7.
