Is there a way to record a ps3/xbox gameplay on my mac with just this cable:

there´s a way that i connect the HDMI side on ps3 and the other in mac, and record it, with a program that let me show the image on desktop?

The mini-Displayport connection on the MacBooks is output only, not input. You would need some sort of USB video capture device to record from you game console:
