ok, so heres what I want to do. I want to be able to to put files in my specific music, photo, document folders ect ect. and I want the files to be mirrored on my external drive. Whats the easiest way to do this? I dont want to have to manually copy and paste the files on the drive.

You can simply drag your Home folder to your external drive once a week or however often you like. It will mirror it exactly. That's what I do.
 
Time Machine does sound best for you, like the previous poster said. SuperDuper might be worth looking into, as well. It will even make a bootable copy of your system so you can still use your computer like nothing ever happened if your internal drive craps out.
