so i have a ipad air on 10.0.1 and i started the jailbreak process and downloaded 10.2 ipsw file and yalu ect
I opened itunes and held shift and picked my ipsw 10.2 file then updated , but in the middle of update error occured 3194 popped up and said couldnt be updated.

And now the ipad is in recovery mode with that usb cable symbol and itunes says" it cant be updated you must restore it to factory settings then when i click restore it says its gonna erase all my data AND update it to latest firmware! How do i stop this from happening?

You can't update to iOS 10.2 as Apple is no longer singing that version. You may be able to stay on iOS 10.0.1 if the update process didn't get to far along. You can only update to what Apple is currently signing, which is iOS 11.0.x or iOS 11.1

You don't.

The error you speak of means Apple is not signing that firmware. When Apple is not signing it you cannot upgrade or downgrade.

If you have a backup you can restore to it when the upgrade is done. Sorry, but welcome to iOS 11.
