Need help Extracting data from Jpeg and PDF to Excel

I have over 10,000 pages of data that I have organized on the computer. I want to be able to extract all the data of Bank's balance sheets to Excel. Most pages are uniform and A year consists of about 500 pages. I know there the program called Able2extract

BUT it only works with pdf files. The Jpeg files do not work even though I convert them to pdf. Also, I have more than 1 page at a time and it seems that able2extract only works for a page at a time. I have over 500 per excel sheet I would like to create.

Anybody have any help? Anyway mac osx can make this easier for me? I can upload a sample of the jpeg.
