need help figuring out why my Corsair USB wired keyboard can't wake up my Mac Mini M1

Which version of MacOS are you running?

EDIT: besides having the latest version of Big Sur installed, try resetting your system management controller:
  1. Shut down your Mac.
  2. Hold down the following keys: Control, Option and right Shift.
  3. After holding those buttons down for 7 seconds, press and hold the power button.
Resetting the NVRam might help:
  1. Shut down your Mac.
  2. Press and hold Option, Command, P and R immediately after turning your Mac back on.
  3. Release the keys after: two startup sounds or when the Apple logo appears and disappears for the second time.

These are reset steps for an Intel Mac. The OP has an M1, and M1s have no SMC.
 
@BlueMoose, I have an M1 mini too but use a BT keyboard (K380) and a Magic Mouse. I find that although I can wake the Mini most of the time, it seems to happen more when I move the mouse rapidly across the desk surface. Sometimes though waking seems very slow, and I find tapping the Mini's power button once lightly does the trick.
