I want to create the ISO file of Windows 8 Pro using the Windows8-Setup.exe on my Windows laptop and then transfer it to my Macbook so I can install it using the Boot Camp Assistant. The problem is that when I open the EXE setup, it asks you to enter the product key first before being allowed to create an ISO file. Will entering the product key here count it as activated? I don't want to activate it on my Windows laptop, only on my Macbook.

No, it won't activate Windows 8 and it only checks that you have a valid product key before allowing the download. What's more important is: "To get a 64-bit Windows 8 ISO, you must run this in 64-bit Windows" as explained in this guide. The Windows 8 upgrade license is a retail version which means it can be transferred to another computer if you choose to as long as there is only one computer using the product key.
