I have an iMac 24" and each time I use safari (5.1.3 in Lion 10.7.3) I must command+, so make the page size bigger, each time, each web I visit and if I close it and I open it again I have to put it bigger again.
isn't there any way to make this option permanent?

First, a better thread title might work better for getting answers.

And while what I am about to suggest won't fix every web page, it will fix a lot of them.

In Safari Preferences, select Appearance and increase the default font size. mine are currently set to Times 16 for the standard font and Courier 13 for fixed width. I suggest you just increase the size of the current fonts by a few points at a time.

And remember it won't affect every web page.

No, there's no way to make a zoom setting permanent.

Also, you may have better success in attracting responses to your thread, and you'll make your thread easier to find for those browsing the forum for the same answers, if you choose a more descriptive thread title, by following this tip.
