My partner switched to Samsung Galaxy Note 8 (much to my disappointment) and i sold his iPhone 7 just fine. Now i've sold his apple watch and need to ship it away. However i can't erase it as i don't have his original phone he paired it with.

Can anyone please help me? I read online that you can

Press and Hold the Side button until you see the Power Off Slider.https://ig.***************/wp-content/uploads/2015/05/How-to-Reset-Apple-Watch-without-iPhone.jpg

Force touch on Power Off

You can see Erase all content and settings, Tap on it.

But is that it. I've gone through the language set up on the watch and then it comes to a pairing screen. Will the person i've sold the watch to be able to pair it to his device and his apple ID?

I'm worried if i post it to him, it might only let you pair with the previous apple ID.

If you didn't unpair it first, that might happen, but since the iPhone was erased too, maybe there is a chance it won't. What I would say is find a friend with an iPhone, pair the watch there first and see if it does the activation lock question. That way you can answer it there, and then unpair it with that phone to reset it

EDIT: On the bottom of that link, it says to sign into iCloud.com and remove the Apple Watch from a list of devices.

As long as the original users icloud apple id is known you can release the watch.

Pair it to your iphone.
It will ask for your partners password
Then unpair from your iphone.
Or delete from icloud.
