Need help updating iTunes

I have a 13" White Macbook. A couple years old. Mac OS X 10.5.8 iTunes version 10.3.1.

I go through the whole update process and it says installation complete. When I go to open itunes it is still not updated. I have tried restarting computer. Do I need to uninstall the previous version? My whole reason for doing this is so I can sync my new ipod touch. I believe I need itunes version 10.5 or later.

Thanks for any help.
